Article: Wild Game Rotisserie | By Doug Sapusek

Step1:

Get yourself a regular rotisserie set. I used the one I had on my grille. I pulled off the mounting hardware for this article. The rotisserie set should come with 2 mounting brackets | 1 rotisserie bar |1 motor (Turns Rotisserie) | and 1 set of screws to mount the brackets. Here is one I found by searching the net. Click HERE. They range in price, so be sure to shop them.

Step 2:

Now, go ahead and get two 2"x4"s and mount the brackets. The 2"x4"s should be a minimum of 24 inches in length, This will give you enough room to raise and lower the meat over the fire to maximize cooking conditions.Take special care to be aware of the direction you are placing the brackets, make sure they are facing the right direction. If you have to, grab the motor and put it on one of the brackets to make sure they are fastened on the 2"x4"s in the right direction. For this step you will need 4 screws and a drill to fasten them. For this I used 2 inch screws to fasten with. The set will probably come with some screws and nuts that will work for a grille mount but for this you will want to use deck screws.

Step 3:

This step is very quick you just want to set up your 2"x4"s to see where you will want to dig your holes. Make sure you set the motor, electrical wire, and plug in a position that will recieve minimal heat exposure. It is plasctic and it WILL melt If it is not out of the way. Take a look at the position of my cord.

Step 4:

You can use anything to dig your holes. The absolute best tool is a post hole digger if you have one. A plain shovel will also do the trick. make sure to think about where your charcoal will be sitting and dig your holes accordingly. You might have to dig the holes a couple of times to get the right depth. The best height for the meat to be above the coals is 12 to 18 inches. We actually redug the holes after 45 mins of cooking to bring the meat closer to the fire.

Step 5:

Fill in your holes, and then water them in. This will make sure the posts are secure and won't fall over and drop your game in the dirt and ashes. Use a LITTLE water, Don't over saturate the ground remember you have to get a fire going.

Step 6:

Now here is the tough part. PICK YOUR GAME. We did the back stap of a wild boar. You could roast Duck, Deer, Game Birds, Hogs, Alligator Tail, Wild Turkey, Fish, and any other animal that you could think of. It is a good way to slow cook your catch or kill and bring out that flavor. After you have decided what to eat, find youself a good marinade or make your own. If you find or know of a good one make sure to post it in out forums under ourrecipe section in the forums. Shown HERE

Step 7:

Now after you have initally prepared your meal, get that fire started. We used matchlight charcoal and stacked it about 6 to 8 inches high . Let it burn down until it has turned from that black color to a grayish ashy color. Or just look on the back of the bag and follow the directions.

Step 8:

Go ahead and place your meat on the rotisserie bar make sure to get the meat to sit firmly on the bar. You dont want the meat slipping and sliding up and down. Notice we didn't cut the fat off that back strap. IT TASTES BETTER, LEAVE IT ON!

Step 9:

Place the rotisserie bar over the fire on its brackets, plug in the motor, and pour yourself a cold one and get ready to relax. This is my favorite part, the aroma of the meat cooking will start to make your neighbors come outside. The smell of wild pig cooking is my favorite cooking smell by far. Also if you want, you can throw some hickory chips on the fire to add a little smoked flavor.

Step 10:

Periodically you will need to get a brush and add some of your marinade or sauce to the meat, this will keep the meat from burning and add a little flavor also.

Step 11:

There you have it, now you know how to build a rotisserie stand in you fire pit. Remember to try all kinds of game and don't throw those 2"x4"s away, you can save them in your garage and pull the rotisserie hardware on and off your grill whenever you want and attach to those 2"x4"s. Also, you can take this process camping with you if you have and outlet. It is a great way to cook while you camp.

ENJOY!
